It’s the snacks that’s hard to resist, the ultimate soft cookie. This isn’t just any cookie, its chocolate chip and peanut butter chip soft chocolate cookie. This cookie recipe is very moist, soft and chocolatey. The peanut butter chips gives a touch of saltiness in the cookie. The texture is between a cookie and a cake. By dunking the cookie in milk it’s just heaven, but once it’s an ice cream sandwich cookie it’s just out of this world.
The recipe is that easy, it took me less than 10 minutes to put everything together and place in the oven. I had a fresh baked afternoon tea within 45 minutes. I made mine humongous, it’s the size of my palm, you can make it smaller just make sure you also reduce the baking time down.
Butter, melted 80g
Brown Sugar 23g
Egg, large 1
All-purpose flour 95g
Coco powder 10g
Baking soda 1.5g
Choc Chip 75g
Peanut butter chip 75g
- Preheat oven to 175 degrees, prepare a baking tray and baking mat
- In a bowl place butter and 2 types of sugar then mix until everything is combine, add vanilla, egg and salt then combine.
- Sieve flour, coco powder and baking soda into the bowl, make sure everything is incorporated before add the choc chip and peanut butter chip. Stir until all the chips are distributed throughout the dough
- Place the dough on the baking mat with an ice cream scoop, for an even cookie. This should make 7 cookies. Bake for 10 minutes then remove from oven and let cool before eating.
