Two overripe bananas, nothing can beat banana bread. I’ve search online for few recipes but I want to make a twist in this banana bread, so I decided to make coco banana bread with almond meal. The recipe is very easy and quick. The texture is very fluffy and moist.
AP flour 70g
Almond meal 20g
Coco powder 30g
Baking soda 3g
Unsalted butter 50g
Brown sugar 100g
Large egg 1
Banana overripe 140g
- Preheat oven to 170 degrees, prepare a bread baking pan 20cm x 8cm or a 1 pound baking dish, brush either oil or butter cover the whole dish
- In a medium size mixing bowl place butter and sugar, this whisk until light and fluffy
- Add egg and banana mix until combine, then sieve flour, coco powder, baking soda, salt and almond into the bowl mix until incorporate.
- Place the batter in the baking pan, bake for about 30 minutes. Remove from oven and let it sit for 5 minutes before remove from the pan.
